Saturday Morning

     I love making breakfast on Saturday morning. This is the perfect blueberry pancake recipe. I got it from the book How to Sew a Button which if filled with nifty things your Grandmother knew how to do.  A lovely little newlywed book from my friend Mary. Our first tip in the book, how to wake up happy with homemade blueberry pancakes. If you have only ever tried bisquick you need to try this recipe from scratch. They are simple, delicious, and the little something extra that makes a house a home.

Flapjacks for two

  • 1 egg (beaten but not conquered)
  • 1 cup milk
  • 2 TBSP canola oil (or melted butter)
  • 1 TBSP sugar
  • 1 1/4 cups flour
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 3/4 cup blueberries (fresh or frozen, fresh is best!)
Use hand beater to mix egg, milk, oil and sugar. With wooden spoon stir in flour, salt, and baking powder. Don't worry if its lumpy, its better to leave a few in. Then fold in your blueberries. Add a pat of butter to your pan and bring to medium heat, where butter just begins to sizzle. Pour about 1/4 cup batter for each pancake. Yields about 8 palm sized cakes. Top with homemade whip cream and maple syrup.
